Ceviche Kit: Choclo corn + Cancha Corn + Aji Limo
These are the 3 critical ingredients needed to make Peruvian Ceviche at home.
As you'll see below, the remaining ingredients are easier to find at a regular supermarket.
- 700 grams of corvina or flounder (cut in small pieces)
- Lime juice from 10 limes
- 1-2 onions (cut in julienne)
- 1 Aji Limo Pepper
-Peruvian corn: Cancha and Choclo or Giant corn)
-Sea salt, 1 clove of garlic, a bunch of cilantro
Keep the cut fish in an ice bowl, similar to a cold bain-marie
Rub the cut onion with salt, then rinse with cold water and drain
Mince the aji limo pepper, the garlic, the cilantro and grate the ginger
Add salt and the lime juice to the fish, then add the garlic, ginger, cilantro and aji pepper
Taste to make sure the flavours are balanced and mix in the onions
Finally, add some TEXTURE with boiled or baked sweet potato and of course, some PERUVIAN CORN
The choclo should be boiled until tender and the cancha is best toasted on a skillet like this.
